What Do You Need?

  • 4 slices of bread (preferably white or milk bread)
  • 2 cups of full-fat milk
  • 1/4 cup condensed milk
  • 1/2 cup sugar
  • 1/4 teaspoon cardamom powder
  • A few strands of saffron
  • 2 tablespoons ghee
  • 10-12 almonds, chopped
  • 10-12 pistachios, chopped
  • 10-12 cashews, chopped
  • Silver leaf (optional) for garnishing
  • Rose petals (optional) for garnishing

How to Make?

You will need to prepare the Rabri (Thickened Milk) first to make a Shahi Tukda. For making the rabri, firstly pour milk in a heavy-bottomed pan and bring it to a boil. Keep on stirring it until it starts to thicken and reduce to half its original quantity.  Now, it’s time to add your condensed milk and let it simmer for another 10 mins. After this, you can add cardamom powder and saffron and mix it well. Your Rabri is done, just remove from heat and let it cool well.

Now for the Shahi Tukda, cut the bread slices into halves or quarters. Then, heat some ghee in a pan and fry the bread pieces until they are golden brown. Now dip the fried or toasted bread pieces in the sugar syrup. Now it’s time to assemble everything into your Shahi Tukda.  Arrange the syrup-soaked bread pieces on a serving plate. Pour the cooled rabri over it. Sprinkle the chopped nuts over the rabri-covered bread. You can also add silver leaf and rose petals for an extra touch of elegance.

2. Rasmalai

What Do You Need?

  • 1-liter milk
  • 1 cup sugar
  • 1/4 cup lemon juice
  • 1/2 tsp cardamom powder
  • 10-12 saffron strands
  • 1/4 cup chopped nuts (pistachios, almonds)
  • 1 cup water

How to Make?

For making Rasmalai, you need to boil the milk and add a bit of lemon juice to curdle it. Now, to get paneer out of the curdled milk, you need to strain it through a muslin cloth. You will have to knead the paneer until it is smooth and then shape into small discs.Next, you need to prepare some sugar syrup. For this, put sugar and water into a pan and heat it. When the syrup begins to boil then add some paneer discs into it. Now, cook for 10-15 minutes until they double in size.

Now it’s time for the rabri, in another pan, boil the milk until it reduces to half. Do not forget to add sugar, cardamom powder, saffron strands, and chopped nuts into it. It will enhance its flavor. Now, add the cooked paneer discs to the rabri and let them soak, your other egg free desserts are ready!

3. Kulfi Tiramisu

What Do You Need?

  • 6 kulfi sticks (traditional Indian ice cream)
  • 1 cup strong brewed coffee, cooled
  • 1/4 cup coffee liqueur 
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup mascarpone cheese
  • Cocoa powder, for dusting

How to Make?

Kulfi Tiramisu is one of the easiest eggless dessert recipes. To make it you need to firstly take the kulfi and slice them into thin circles. Now, you arrange the slices in a layer in a shallow dish. After this, you need to mix the cooled coffee with the coffee liqueur in a separate bowl. Then, pour the coffee mixture evenly over the kulfi slices. Let them soak for about 5-10 minutes.

Now you need to whip the heavy cream with powdered sugar and vanilla extract. Then take your mascarpone cheese and gently fold it into the whipped cream until it is perfectly smoothens. Now, put half of the mascarpone mixture on the soaked kulfi slices. Keep on repeating the step with each layer. Once you have completed layering, then refrigerate the tiramisu for at least 4 hours. Do not forget to dust the top with cocoa powder before serving.

4. Sooji Halwa Cake

  • 1 cup sooji
  • 1/2 cup ghee 
  • 1 cup sugar
  • 2 cups water
  • 1/2 tsp cardamom powder
  • Nuts for garnish 
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/2 cup yogurt
  • 1/4 cup vegetable oil
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cardamom powder
  • Pinch of salt

How to Make?

To make Sooji Cake, you need to make the sooji halwa first. For it, roast semolina or sooji in ghee until it turns golden. Now, boil water with sugar and add roasted sooji in it. Also add cardamom powder for extra flavor and cook until it thickens.

Now for preparing the cake batter, add yogurt, sugar, and oil and mix them well. Now, add flour, baking powder, baking soda, cardamom, and salt to it and start mixing until it smoothens. Now spread the sooji halwa in a greased pan and pour your cake batter over it evenly. Bake the entire thing at 350°F for about 30-35 mins. Now, cool your cake for 10 mins and then garnish it with nuts. Your Sooji Halwa Cake is ready to serve.

5. Phirni

  • 1/4 cup basmati rice, soaked for 30 minutes
  • 4 cups whole milk
  • 1/2 cup sugar 
  • 1/2 tsp cardamom powder
  • Saffron

How to Make?

Phirni is a classic Indian dessert recipe with no eggs in it. To make it, you need to grind soaked rice with a little milk and make a coarse paste from it. Once done, you need to pour milk in a heavy-bottomed pan to bring it to a good boil. Once it starts boiling, lower the heat, add your grinded rice paste. Keep on stirring it to avoid forming rice lumps. Once it starts to thicken, add sugar, cardamom powder, and saffron to it. 

When you have mixed everything properly, remove the mixture from heat and let it cool at room temperature. After this, you need to refrigerate your phirni and garnish it with chopped nuts. Serve this Indian Dessert cool to enhance its flavors.
